Crispy Black Bean Tacos With Avocado Lime Sauce

This recipe is simple, completely vegetarian, and easy to follow. My husband saw me making these and immediately was like "this is a struggle meal". Who cares? This shit was hitting. I am the only person who cooks in my home so I usually have control over what we eat for our lunch and dinner. With that being said, we have secretly been eating vegetarian 2-3 times a week without my husband knowing. As long as the food tastes good, and the weight of the plate is heavy, he'll eat it. Now for the midnight snack recipe or just a light treat in between meals:


Ingredients:

White corn tortillas

1 can black beans

Shredded Parmesan cheese

Vegetable oil

1 Avocado

Cilantro

1 Green Onion


Directions:

Coat your pot with one teaspoon of vegetable oil and warm for two minutes

Simmer the canned beans in a separate pot

Place down your first tortilla and flip when light brown

Flip and spoon in some beans

Sprinkle some Parmesan cheese and fold

Cook and press on both sides

Dip in Avocado Lime Dip and enjoy!


Avocado Lime Dip:

Mash one large avocado and mix with the juice of a half lime

Mince one green onion and three sprigs of cilantro

Mix and enjoy!
